Choose your favourite veggies to use. My favourite combination includes avocado, chopped tomatoes, cucumbers, carrots, beetroot and hummus. You can use store-bought or make your own with chickpeas, garlic and tahini (refer to my recipe here). Spread the hummus on delicious sourdough bread and top with the greens mix. Finally, top it off with some salt and cracked pepper!

14/31 Baked Tempeh Skewers
If you are looking for a high protein vegan meal or snack, try these tempeh skewers. Slice the tempeh into cubes sized pieces and marinate in a bag with the soy sauce, chilli powder, salt, and ground cumin. Leave for at least 10 minutes or overnight.Then slice the capsicum into skewer sized pieces. and skewer the tempeh and capsicum. Lastly, you can bake or place these on the BBQ! Serve the finished skewered kebabs on salad greens or alongside your favourite grains and veggies.

Make this delicious and easy vegan Biscoff Slice for your Veganuary desserts this year! With just four simple ingredients, you can whip up a vegan treat that will be sure to please. To make it, preheat oven to 180 degrees and blend together one cup of plant milk, two teaspoons of baking powder, and 36 biscoff biscuits (save two for the crumble top). Add half a cup of biscoff spread to the mixture and stir until fully combined. Pour into a baking paper-lined tray and bake for 20 minutes before flipping onto a cooling rack. Once cooled slightly, top with a coconut butter scotch sauce and crumbled biscoff biscuits. Or you can mix agave or maple syrup with biscoff spread as an alternative topping. Enjoy!

Here's what you'll need: cooked chickpeas, vegan mayonnaise (add more or less to taste), ¼ celery stick (cut into small pieces), ¼ red onion (sliced finely), lemon juice, fresh celery leaves, two slices of sourdough or your favourite bread, salt and pepper. Simply smash the ingredients together then mix them in a bowl and enjoy!
19/31 Healthy Maggi Noodle
Have a delicious vegan dinner in no time with this delicious Veganuary recipe! You'll need ½ a packet of Vits or Maggi noodles, 100 grams of mushrooms (king oyster or shimeji varieties are great!), ½ cup of broccoli florets, 2 teaspoon garlic chilli and garlic, and 50g to 100g tempeh. Slice the tempeh and cook it in an air fryer for 10 minutes. Finally assemble all the ingredients together and enjoy your meal!
20/31 Jackfruit Popcorn Chicken
Are you looking for a delicious and healthy veganuary recipe? Try this vegan popcorn chicken made with young jackfruit! This irresistible dish is sure to satisfy your cravings. All you need are some basic pantry essentials like cooking oil, all-purpose flour, vegetable stock cube, spices, almond milk and apple cider vinegar. To make it extra flavorful and spicy, add some smoked paprika, chilli powder or cayenne pepper. 22/31 Sushi Sandwich
For those looking for an exciting new vegan recipe this Veganuary, try making Onigirazu Sushi Sandwiches! This delicious seaweed-based recipe makes use of a chickpea smash to give the same texture and flavor as traditional tuna sushi. To make it, cook ¼ cup of sushi rice in a rice cooker with ½ cup of water, then mix with vinegar, sugar, and salt. Layer half a sheet of nori seaweed with the cooked rice, the chickpea smash, sliced avocado, and more rice. Place another nori sheet on top and fold like a parcel before refrigerating for an hour. Remove from fridge and slice in half to serve - no dipping sauce required!

If you're looking for a delicious and easy vegan option to celebrate Veganuary, then tofu lettuce cups are the perfect recipe! This flavourful dish requires just 11 ingredients and comes together in no time.
24/31 Fluffy Sunday Pancakes
Treat yourself to these delicious and fluffy Sunday pancakes! Perfect for Veganuary, it takes just 15 minutes prep time to make a batch of four servings. Just whisk together the dry ingredients (flour, sugar, baking powder and salt) in a bowl and stir the wet ingredients (soy or almond milk, apple cider vinegar and vanilla extract) in another. Combine the two mixtures until smooth then leave to rest for five minutes before cooking. When ready, fry pancakes on a hot pan with oil or vegan butter for 2-3 minutes each side. Serve with your favourite toppings - maple syrup and fresh cut fruit work perfectly!
25/31 Tofu Scramble
This tofu scramble is a delicious egg free alternative! It wasn’t until well into my adult years that I discovered that eggs were a major trigger for my eczema. It had never occured to me that the culprit could be eggs! Anyone who is struggling with skin issues I highly recommend you try going egg free and see how it goes.
To cook, simply break apart the firm tofu in a bowl using a fork. In a separate bowl whisk together soy milk, black salt, nutritional yeast and turmeric. Fry for 3 minutes or until the tofu has absorbed the liquid fully. Enjoy!
26/31 Hokkien Noodle Stirfy
This Hokkien Noodle Stirfry is an awesome weeknight dinner idea. I like to eat something similar to this all the time! You can easily change the veggies as per what is readily available to you. This is easily one of my favourite veganuary recipes! I'm sure that this veganuary recipe will stick with you beyond January!
27/31 Pickled Red Onion
Veganuary recipes don’t need to be complicated! If you’re looking for a simple, delicious vegan recipe – why not try making pickled red onions? This easy recipe takes only 4 ingredients; red onions, vinegar, sugar, salt and filtered water. Not only is it quick and easy to make but it’s also a great way to add flavour to your meals. You can enjoy pickled red onions on tacos, in salads or on sandwiches - the possibilities are endless! So if you want to add variety and extra flavour to your vegan diet this Veganuary – give this recipe a try!
28/31 Vegan Rice Paper Roll
For the perfect veganuary lunch recipe, try these easy-to-make avocado and chickpea rice paper rolls! All you need are a few ingredients: three rice paper rolls, one cup of chickpea smash, half an avocado, and vegan mayo (for dipping). Wet the rice paper rolls, fill with the chick pea smash and avocado, then roll up. You can either heat them in an air fryer for 10 minutes to make them warm and crunchy or enjoy them cold right away!
29/31 Colourful Chocolate
Brighten up your Veganuary this year with some colourful DIY chocolate! All you need is some vegan white chocolate, food colouring, and edible glitter. Simply melt the white chocolate, mix in the food dye and refrigerate in a chocolate mould for 30 minutes to set. Sprinkle with some edible glitter and voila - delicious, colourful, homemade treats ready to be devoured!
30/31 Milo Protein Balls
These Milo Protein Balls are the perfect snack to add to your veganuary recipes. I actually believe that these are the best protein balls that I have ever tasted! They are perfect to treat yourself or refuel before a workout!
All you'll need is ½ cup milo, ½ cup vanilla protein powder, ⅓ cup almond flour, ⅓ cup of almond butter or peanut butter and ⅓ cup agave or maple syrup. Simply mix all the dry ingredients together, then slowly add in the wet ingredients until it forms a cookie dough. Roll the dough into balls and refrigerate until they’re ready to enjoy!
31/31 Petai
The last veganuary recipe on this list is a bit of fun! Petai is popular dish in asian countries, but is well known as the "smelly bean". Whilst you may not want to include the smelly bean in your everyday diet, it is something that I believe everyone should try at least once!
