    Homemade broccoli slaw is a flavorful and nutritious side dish that can elevate any meal. With its vibrant colours, refreshing crunch, and delicious combination of flavours, it is sure to become a staple in your kitchen. To make the broccoli slaw salad dressing you are going to need 1 cup of veganaise or 1 cup of coconut yogurt. These can be store-bought but I highly recommend you try my homemade recipes!

    Step by Step Instructions for This Broccoli Slaw Recipe

    Broccoli Salad Ingredients

    To make this easy and healthy broccoli salad recipe you will need:

    • 1 cup of homemade veganaise. Make exactly 1 serving of this homemade veganaise recipe. It's only 4 ingredients and only takes 30 seconds! You can also use store bought mayonnaise
    • 1 broccoli (we are using the whole broccoli, stems and all!)
    • ¼ cup spring onion
    • ½ cup pomegranate seeds

    Optional Ingredients

    • 10 pitted dates (cut into small pieces)
    • ¼ cup of roasted almonds (or any nut of choice)

    Step by Step Instructions For Vegan Broccoli Slaw

    1. Wash the broccoli head and remove any rough pieces. Note that we are using the whole stalk so you don't want to remove too much. Usually the only part that requires removing is a small slither off the end of the stalk. The rest you want to keep!
    2. Slice the broccoli into large florets.
    3. Slice each floret into thin long pieces. Keep the broccoli heads on. Make sure any chunky pieces of the stems are sliced thinly. Some pieces will be stem only or broccoli head only, this is okay. Add all of the sliced broccoli to a large bowl.
    4. Slice the spring onion, using only the the green parts.
    5. Remove the seeds from the pomegranate if not already done so.
    6. Add pomegranate seeds, spring onion, and mayonnaise to the bowl of broccoli and stir.
    7. Transfer to a decorative bowl if needs and serve!

    Expert Tips

    • Leave a small amount of sliced spring onion and pomegranate seeds for sprinkling on top. This will make the salad bright and much prettier! Perfect if you are taking this to a BBQ or serving at a picnic

    Variations and Substitutions For The Recipe

    To take your homemade broccoli slaw to the next level, here are some tips to enhance its flavour:

    1. Add a crunchy nut! I like to add roast almonds or slice almonds, but you can use any nut of choice. Some ideas include pistachios, walnuts, sun flower seeds, or pine nuts.
    2. An alternative to using mayonnaise is to use greek yoghurt instead. This is a great oil free alternative and if you want a dairy free option you could use a store bought soy or coconut yoghurt. I also make a delicious coconut yogurt recipe out of real coconuts that you can try here!
    3. If you want to add a zesty and tangy flavour to the broccoli slaw salad dressing, add 1 tablespoon of dijon mustard and the juice of ½ a lemon to the mayonnaise or yoghurt
    4. To give the salad additional sweetness, I recommend adding ¼ cup of maple syrup to salad dressing
    5. Another great way to add additional sweetness to the salad is to add ½ cup of dried fruits. My favourite is dried dates. Remove the pits from the dates and chop into small pieces. Other great dried fruit to use includes sultanas or cranberries
    6. For a spicy kick, add some diced jalapenos or a sprinkle of red pepper flakes. This will add a delicious heat and elevate the overall flavor of the slaw.

    Serving Suggestions and Pairings For Broccoli Slaw

    This homemade broccoli slaw recipe is incredibly versatile and can be served in a variety of ways. Here are some serving suggestions and pairings to inspire you:

    • Use the slaw as a topping for sandwiches and burgers. It adds a delightful crunch and a burst of flavor to any sandwich creation.
    • Add some cooked quinoa and tempeh to create a simple grain bowl for lunch (this is my favourite thing to do!) This recipe pairs well with quinoa, brown rice, couscous, as well as air fryer tempeh or tofu
    • Bring the slaw to picnics, potlucks, and BBQs as a crowd-pleasing side dish. It can be made in advance and easily transported.

    Storing and Preserving Homemade Broccoli Slaw

    Remember to store any leftovers in an airtight container in the refrigerator. The slaw will keep well for up to 2-3 days, but it is best enjoyed fresh. Before serving any leftover slaw, give it a quick toss to redistribute the dressing and ensure that it is evenly coated.
