I love making this recipe as the perfect night before meal prep breakfast recipe! It is not only tasty but also high in protein thanks to the yogurt. Just make sure to use a greek yogurt or if you need a high protein dairy free alternative try using a soy yogurt (I highly recommend my recipe!).
It's naturally sweet
I love that the chia pudding is naturally sweetened by the dragon fruit! This is done by blending the dragon fruit with the yogurt.
Ingredients
To make this dragonfruit chia pudding recipe you will need:
- ¼ red / purple dragon fruit (plus some more for topping)
- 1 cup yogurt (I like to make it with my probiotic soy yogurt recipe but this is also very tasty with coconut yogurt)
- 3 tablespoon chia seeds
- 1-2 tablespoon maple syrup, agave or any sweetener of your choice (optional)
Method
To make this dragonfruit chia pudding recipe:
- Cut the dragonfruit to extract the flesh (let me show you how to cut a dragonfruit)
- Add the dragonfruit flesh plus the yogurt to a blender and blend smooth. Taste the mixture to see if you want to add any maple syrup or agave syrup. This really depends on your taste and what type of yogurt you choose to use.
- Pour the dragonfruit and yogurt mixture into a jar and add the chia seeds. Stir vigorously.
- Keep in the fridge for at least 1 hour or overnight before topping with fresh dragonfruit to enjoy!

- Chia seeds to liquid ratio: The ratio of 1 cup yogurt to 3 tablespoon of chia seeds is just perfect for me! But this totally depends on what type of yogurt you are using. If the yogurt is super thick you may choose to add a dash of soy milk or any milk of your choice
- Yogurt VS milk: I like to use yogurt for my chia puddings because it distributes the chia seeds really well with no need to stir again. When I use milk, the chia seeds fall to the bottom of the glass and parts become very chunky. Using yogurt creates a way better texture and its just easy!
