I love a traditional greek salad, but it simply isn't filling enough as a stand alone meal. This is why I came up with this greek quinoa salad recipe. It is a healthy vegan quinoa bowl made with quinoa, tomatoes, olives, cucumber, mint, avocado, and a lemon olive oil dressing.
Quinoa Salad With Avocado
A traditional greek salad is not usually made with avocado. However, to make this quinoa salad idea vegan, I have decided to substitute feta cheese with avocado. I use half an avocado in my recipe, but you may choose to include a whole one if you are feeling especially hungry or would rather an avocado quinoa salad.
This quinoa salad with cucumber makes a great vegan meal prep idea. The photo above shows this salad divided into 4 work lunches.

Quinoa Salad Recipe Dressing
I keep the salad dressing for this recipe real simple.Using only fresh lemon juice, vinegar, and olive oil. Alternatively, If you are looking to add more flavour to your salad, a great idea could be to sprinkle some dukkah! You can easily buy some ready made dukkah or try making your own. Greek Quinoa Salad
- 3 cups cooked quinoa about ¾ uncooked quinoa
- 1-2 cucumbers
- ½ jar pitted black olives
- ½ punnet cherry tomatotes, halved
- ½ bunch fresh mint leaves
- 1 avocado, diced
- ½ red onion, diced optional
- ½ juice of fresh lemon
- 1 tablespoon white vinegar
- 2-3 tablespoon olive oil
- Add all ingredients to a bowl and toss
