Watermelon is also a great fruit to enjoy if you are active like myself! Watermelon has a high water content, is full of antioxidants, and is high in potassium and amino acids. This recipe calls for Celtic salt to be added as well, which will help replenish the electrolytes in your body. This helps promote better water absorption in your body, preventing dehydration. The sweetness is what makes these watermelon ice pops so refreshing and delightful.
Ingredients
To make these hydrating watermelon ice pops, you'll need the following ingredients:
- ¼ of a whole watermelon: Choose a ripe and juicy watermelon for the best flavor and I also recommend using a seedless watermelon. This means that you don't need to strain the watermelon after blending, keeping the natural fibre from the fruit in the popsicles.
- 1 teaspoon Celtic sea salt: This is for extra hydration and to restore electrolytes in the body.
- 2 tablespoon of maple syrup or agave: (more/less can be added depending on how sweet you like it!): The natural sweetness from maple syrup or agave adds a delicious touch to the ice pops. Adjust the amount based on your preference.
- Ice pop molds: You'll need ice pop molds to freeze the watermelon mixture into popsicle shapes.
Method
To make these hydrating watermelon ice pops:
- Start by removing the skin of the watermelon and cutting it into small chunks.
- Add the fresh watermelon flesh, Celtic sea salt, and maple syrup (or agave) into a blender. Blend the mixture until it becomes smooth and well-combined. If you aren't using a seedless watermelon, you can strain the mixture through a sieve before proceeding to the next step. I prefer to use a seedless watermelon to keep the watermelon pulp in the recipe.
- Pour the blended watermelon mixture into the ice pop molds, leaving a small gap at the top to allow for expansion during freezing.
- Insert the sticks before freezing. Freeze for at least 4 hours or until completely solid
- Once frozen, remove the ice pops from the molds by running them under warm water for a few seconds.
- Serve the watermelon ice pops immediately and enjoy the refreshing taste of summer!
