An easy and healthy jackfruit sorbet recipe that is made with just 3 ingredients: ripe jackfruit, banana, and lime juice. All you need is a blender or a food processor to make this easy jackfruit recipe.

I love to make jackfruit sorbet but sometimes I feel like something creamier and I prefer to make dairy free jackfruit ice-cream instead! I also love to make many other dairy free tropical fruit ice-creams such as lychee ice-cream, mango popsicles, or something lighter like these 3 ingredient dragonfruit popsicles.

Young Jackfruit VS Ripe Jackfruit
Young Jackfruit
Young jackfruit is a common Asian tropical fruit that is commonly used in Asian cooking. However, in recent years jackfruit has become increasingly popular in Western cooking, where it is commonly used as a meat substitute. A great example of this is my jackfruit popcorn chicken recipe. Young jackfruit is white in colour, tough, and needs flavour added. Eating the young jackfruit raw is not advised.
Ripe Jackfruit
On the other hand, ripe jackfruit is a bright yellow colour and is crunchy and sweet. In Malaysia (my current home), ripe jackfruit is commonly enjoyed fresh. Thats why I like to make jackfruit sorbet or jackfruit ice-cream with the ripe jackfruit. It has a deliciously sweet flavour and it's truly a unique flavour as well.

Ingredients
To make this delicious jackfruit sorbet, you'll need just three simple ingredients:
Ripe Jackfruit Flesh
You'll need about 250 grams of fresh jackfruit flesh, with the seeds removed. This is equivalent to approximately 385 grams of jackfruit with the seeds still intact. This is the star of the recipe so make sure to use ripe and sweet jackfruit! It is easier to use fresh (not frozen jackfruit) but if you have a good blender then frozen jackfruit will work too.
Banana
1 ripe banana. The banana adds natural sweetness and creaminess to the sorbet. Again, it is easier to use a fresh banana (not frozen).
Lime Juice
The fresh juice of three limes. The lime juice provides a bright, tangy counterpoint to the sweetness of the jackfruit and banana. The lime juice helps to enhance the overall flavor and balance the sorbet flavour.

Jackfruit Sorbet
Ingredients
- 250 grams ripe jackfruit flesh seeds removed, this is approx 385 grams with the seeds
- 1 banana
- 3 juice of, limes seeds removed
Instructions
- Peel the banana, juice the limes, and remove the seeds and hard seed shell from the ripe jackfruit.
- Add all ingredients to a blender or food processor and blend smooth.
- Pour into a container (shape doesnt matter), cover and freeze for at least 4 hours.
- Remove from the freezer and let it defrost for approximately 20 minutes. Using a spoon, smash the sorbet and then mix. You can also use a food processor to do this. If using a food processor, don't wait 20 minutes, blend it immediately.
- Use an ice-cream scoop to serve the sorbet in bowls. The ice-cream scoop will compress the sorbet and create perfect ice-cream scoop shapes.
