This potato bake is seriously delicious and super easy! It is simple and so tasty, and with only a few ingredients, it speaks true to the saying that "less is more"
The truth be told, this potato bake was a total fluke. I was foraging through the fridge trying to find something to make, and thought, okay whatever, let's try and make something up. It was one of the first recipes that I tried without following a recipe. I was honestly expecting for it to turn out like a disaster, but it was quite the opposite! It was sooo tasty!!
The following weekend I brought this dish along to a dinner party and it was hugely popular amongst the vegans and the non vegans. I knew I was onto a winner. It gave me a false idea of cooking really.... as I soon learnt that most dishes you make for the first time aren't spectacular first go.
Potato Bake Ingredients
Hidden in this recipe, are 2 full bags of fresh spinach, which is a great way to sneak in some greens for kids, or boyfriends!
A crucial tip for making this recipe, is that you should and must use a food processor! You could probably slice the potato with a knife, but this would be time consuming and you won't achieve the crispy layer on top, which tastes REAl good. The thinly sliced potato also makes for a denser consistency. Make sure you use parmesan and not a stringy cheese. Otherwise you won't achieve the crispy top. The BEST Potato Bake
Ingredients
- 6 medium potatoes washed well
- 200 g spinach finely chopped
- 2 tablespoon vegan butter
Topping
- 2 tablespoon vegan parmesan
- 1 handful parsley or chives optional
Instructions
- Pre-heat oven to 180° / 250F
- Halve the potatoes to fit in the food processor chute. Use the smallest slicer blade on your food processor to achieve "pringle" like potato slices. Process all potatoes like this
- Grease a baking dish before placing 1 layer of potato slices in the dish. Use half of your potato "pringle slices"
- Evenly spread the finely chopped spinach over the first layer of potato
- Place vegan butter over the spinach in even intervals or pour evenly if melted. Use only half of your butter here (1 tbsp)
- Lay the final layer of potato slices over the spinach. Use the prettiest "pringle slices" on top
- Repeat step 5 with the butter for the final layer
- Cover with foil and bake for 35 minutes
- Remove from the oven and sprinkle vegan parmesan on top, as well as any herbs (chives or parsley) if using
- Bake for another 20 minutes (until top layer has started to brown with a crispy top). Bake WITHOUT a cover this time to make sure it goes crispy (YUM!)
