I've experimented with a lot of power ball and date energy balls but out of all the recipes I've tried, these coconut almond balls are my favourite!

They're easy to make
The coconut almond balls are the perfect power balls recipe because they use minimal ingredients but are deliciously smooth and tasty!

The use of almond meal gives the power balls a smooth texture. This is perfectly combined with the crunch of the desiccated coconut.
They're perfect for a healthy snack or pre workout snack
Dates are the perfect fruit to enjoy right before a workout or on an empty stomach! In fact dates are commonly given out during Ramadan for this exact reason!
Ingredients
All you need for these power balls is:
- 1 cup almond meal (ground almonds, with no skins): This is is what gives these balls such a smooth texture. It's easier to just buy almond meal but you can make it by grounding up almonds in a blender or food processor.
- ⅓ cup desiccated coconut: for a delicious tropical crunch!
- 12 Medjool dates: make sure to use Medjool dates and that they are pitted
- 1 teaspoon vanilla extract: for a bit of flavour!
- ½ teaspoon salt: I like to use pink Himalayan salt. Its a very salty salty and the flavour of important for this recipe
- 1 - 2 tablespoon of water. Slowly add water if the mixture is too dry
The type of dates you use is really important!
Make sure to use medjool dates and if possible fresh ones that are still gooey and juicy. If the dates have been sitting in your pantry for a while they can start to go hard and a bit crusty. But don't worry if this has happened to you! To save the dates, simply soak them in warm water for 10 minutes.
Getting the right consistency
Add all of the ingredients to a food processor and blend until a cookie dough texture is formed. The mixture should start to clump together, forming balls or eventually clumping completely together (stop before you reach this point). If the mixture is too dry, add 1 tablespoon of water and blend again. Continue adding 1 tablespoon of water until the right consistency is reached.
Now it's time to roll!
This recipe makes 12 power balls. You can wet your hands a little bit to stop the mixture sticking to your hands as you roll.
Storage
You can store these power balls in an airtight container for 2-3 weeks. Perfect for meal prepping! I love meal prepping and these power balls are always on rotation in my house.

Coconut Almond Balls
Ingredients
- 1 cup almond meal
- 12 Medjool dates pitted
- ⅓ cup desiccated coconut
- ½ teaspoon fine pink salt or any other high quality salt
- 1 teaspoon vanilla extract
- 1 to 2 tablespoon of water if the mix is a little bit dry
For Dusting
- ¼ cup desiccated coconut
Instructions
- Add almond meal, Medjool dates (ensure pitted), desiccated coconut, salt and vanilla extract to the food processor
- Pulse until all ingredients are blended. Continue pulsing until the mixture starts clumping together like cookie dough. Slowly add water, 1 tablespoon at a time if the mixture is dry.
- Use a spoon to measure each ball size evenly. Roll into a ball shape with your hands (lightly wet your hands to stop the mixture sticking).
- Pour dessicated coconut into a bowl. Dust each ball in the desciated coconut until covered.
