Soy yogurt offers numerous benefits that make it a popular choice among health-conscious individuals. One of the main advantages of soy yogurt is that it is dairy-free, making it suitable for those with lactose intolerance or following a vegan lifestyle. Soy yogurt is also rich in nutrients, including protein, calcium, and vitamins, making it a great addition to a balanced diet.
Furthermore, this soy yogurt recipe contains live probiotics, which can support digestive health and strengthen the immune system. Incorporating this soy yogurt recipe into your diet can help promote a healthy gut and overall well-being.
Why you should choose soy yogurt over coconut yogurt
Soy yogurt is a nutritious alternative to traditional dairy-based yogurt. It contains essential nutrients that contribute to a healthy diet. One serving of soy yogurt typically provides a significant amount of protein, which is essential for muscle growth and repair. This is the main reason that I prefer to eat soy yogurt over coconut yogurt. For those following a vegan or vegetarian diet or for those who are simply looking to increase their protein intake, soy yogurt makes for a great choice over coconut yogurt which is very low in protein in comparison.
Ingredients for this soy yogurt recipe
To make this soy yogurt recipe you will need:
- 2 x packets or 600 grams of silken tofu
- ⅓ cup of maple syrup
- 2 x probiotic tablets. Make sure the tablets have live Lactobacillus bulgaricus and Streptococcus thermophilus
- 1 cheese cloth with an elastic band
- 1 glass jar
- Yogurt making kit (advised if you live in a non tropical / colder climate)
Choosing the right probiotic
For yogurt to be considered "probiotic yogurt" it must contain Lactobacillus bulgaricus and Streptococcus thermophilus. Any vegan yogurt starter will also do. However, I have successfully made yogurt that has feremented and created that sour natural yogurt taste with a probiotic that contains Lactobacillus bulgaricus only.
Step By Step Instructions For Making Soy Yogurt
To make this soy yogurt recipe follow these simple steps:
- Add the silken tofu and maple syup to a blender and blend smooth.
- Break open the capsules of the probiotic and mix in either with a spoon or a quick pulse of the blender.
- Pour the mixture into a glass jar and cover with a cheese cloth and elastic band.
- Now its time for fermentation! Cover the jar completely with a towel or use a proper yogurt storage container and ferment for 24 hours. I live in tropical country so I just put my yogurt outside for 24 hours.
- If you live in a colder country you may need to heat the yogurt first before leaving for fermentation.
- After 24 hours, mix the yoghurt to remove all of the air bubbles to create a smooth and creamy yoghurt consistency.
- Seal the jar and store in the fridge until ready for use.
Storing and Serving Soy Yogurt
Use the yogurt within a week of making! To keep your soy yogurt fresh and tasty, store it in an airtight container in the refrigerator. Properly stored, homemade soy yogurt can last up to one week. When serving, you can enjoy it on its own as a quick and healthy snack or incorporate it into your favorite recipes. Use it as a base for smoothies, parfaits, or as a substitute for dairy yogurt in baking and cooking.
Expert Advice About Soy Yogurt
Can I use other sweeteners instead of maple syrup?
Yes, you can use alternatives like agave syrup or honey. You need sugar for the fermentation of the yogurt. If you prefer to use a calorie free sweetener like stevia you can use a tiny bit of maple syrup / honey etc whilst fermented and then add the stevia or similar as the last step.
Can I use a different type of tofu?
Silken tofu works best for this recipe as it creates a smooth and creamy texture. Firm tofu may result in a grainy consistency. I don't recommend it. Use silken please!
How can I make my yogurt thicker?
You can achieve a thicker consistency by using a higher tofu-to-liquid ratio or you can add 1 tablespoon of arrow and bring the liquid to a boil before removing immediately (stirring constantly). Do this step before fermentation.
Can I use other probiotics for fermentation?
It's important to use live culture probiotic tablets that contain live Lactobacillus bulgaricus and Streptococcus thermophilus. However, I have successfully created this recipe with a probiotic that contains live Lactobacillus bulgaricus and does not contain Streptococcus thermophilus
Can I freeze soy yogurt?
Freezing soy yogurt may alter its texture and affect the taste. It's best to consume it fresh for the optimal experience.
