Who says you can't have delicious banana bread if you're vegan? This sweet, moist banana bread recipe is incredibly easy to make and sure to satisfy your taste buds. With just a few simple ingredients and a few steps, you'll have fluffy and flavourful banana bread in no time. And if you don't believe that's possible, then I'm 100%positive that this vegan recipe for banana bread will change your mind!
How To Make This Vegan Banana Bread Recipe
Gather Necessary Ingredients.
Before you begin baking, make sure you have all of the necessary ingredients required for this delicious vegan banana bread. These include: ยผ cup of coconut oil, ยผ cup of vegan butter / margarine, 1 cup of coconut or brown sugar, 4 medium extra ripe bananas (mashed), 2 cups of all purpose flour, 1 teaspoon vanilla extract, 1 teaspoon baking powder, ยฝ teaspoon baking soda, ยผ teaspoon of salt, ยผ cup of silken tofu, and optional ingredients to add are either 1 cup of walnuts or 1 cup of dark choc chips.
Now that you have all your ingredients laid out and ready to go itโs time to get started!
Preheat Oven and Prepare Baking Pan.
Preheat the oven to 350ยฐF or 180ยฐC and lightly grease a 9x5 inch baking pan with either vegan butter or coconut oil. I like to use coconut oil that I keep in a spray bottle. I use refined coconut oil so it doesn't leave a coconut taste. Spread the margarine or oil evenly along the bottom and sides of the pan before setting aside for later use.
Combine Wet Ingredients in a Bowl.
In a medium-sized bowl, mash the bananas with a fork or potato masher until it forms a paste. In a separate bowl, Whip the vegan butter, coconut oil and sugar in a bowl until combined. You should get a thick creamy mixture that looks light brown in colour. Add the vanilla extract, silken tofu, and mashed bananas and mix until well combined.
Mix Dry and Wet Ingredients Together Until Combined.
In another bowl, combine the flour, salt, baking powder, and baking soda 1. Whisk the ingredients until everything is evenly distributed before adding it to the banana mixture. Slowly add the dry ingredients into the wet ingredients while stirring continuously. The batter should become thick as you mix everything together with a wooden spoon or spatula. Don't worry if there are still some lumps, just make sure most of it is incorporated before pouring it into your banana bread mould.
Add in Optional Toppings and Bake!
Once everything is mixed, you can add in some optional toppings to make your vegan banana bread extra delicious. For instance, you can fold in some walnuts or dark chocolate chips if desired. However, I like to enjoy my banana bread without any additional toppings (it's totally up to you!).
Finally, pour your batter into a greased bread pan and bake at 350ยฐF or 180 degrees for 45-55 minutes or until it passed the toothpick test (insert a toothpick into the center and it should come out clean when done). Allow the bread to cool before slicing it up. Enjoy!
Do I really need to use tofu in this vegan banana bread recipe?
The tofu in this recipe helps bind the banana bread in replacement of the eggs. Without the tofu the banana bread may be a little bit crumbly. I have made this recipe without the tofu before and its not as good, but definitely possible.
Can I use a different flour?
You can substitute for any flour, but all purpose flour works best. I have made this recipe with oat flour before and it was a little bit dry! All purpose flour works best.
Can I make this a gluten free vegan banana bread recipe?
Yes! I recommend that you use gluten free plain flour in replacement of the all purpose flour.
How Long Can I Keep The Banana Bread?
I like to make this recipe for the week ahead and take it to work for a special treat! It will last in your fridge in a sealed container or cling wrap for 4 days.
TIP #1 - Freeze your bananas, even the extremely black spotty ones!
Defrost for approximately half an hour before baking. Frozen bananas go extra mushy and are therefore even better to use than fresh ones!
TIP#2 - Get creative with your optional toppings
I recommend that you use either walnuts or dark chocolate chips as optional add ons. However, you can try whatever you want! Get creative and add white chocolate, blueberries, raspberries, pecans, or any type of nut, chocolate or fruit! To be honest, I'm a bit boring and actually prefer my banana bread plain, with no additional ons.
Vegan Banana Bread Recipe
Ingredients
- ยผ cup coconut oil
- ยผ cup vegan butter
- 1 cup coconut or brown sugar
- 4 extra ripe medium sized bananas defrosted frozen bananas work really well too
- ยผ cup silken tofu
- 2 cups all purpose flour see blog notes for alternatives
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ยผ teaspoon baking soda
- ยผ teaspoon salt
Optional
- 1 cup walnuts OR dark chocolate chips
Instructions
- Pre heat oven to 180 degrees / 350F
- Add sugar, butter, and coconut oil to a a large bowl and whip with an electric mixer. Add the bananas and tofu, stirring into the wet mixture until combined.
- In a separate bowl, add all dry ingredients and combine with a whisk.
- Add the dry ingredients to the wet, folding until combined. If the mixture is very dry, you need more bananas. You can add a dash of plant milk if you don't have more bananas. Although the mixture should be quite thick. Fold in the chocolate chips or nuts (if using).
- Line a loaf pan with baking paper and grease with oil or vegan butter. Add the wet mixture to the loaf and spread evenly. Bake for 45 minutes.
- Remove from oven, and let cool on a baking tray until slicing.
