I honestly love this vegan parmesan cheese. I almost always have a jar in my fridge because of its versatility! I like to sprinkle it on our pastas or on top of a potato bake. Vegan, All Natural Cheese
What I most love about this cheese is that its completely made up of all natural ingredients. There are a lot of vegan cheeses available now, but a lot of these contain gums and stabilisers (nasties!). If you’re eating vegan cheese over dairy cheese for health reasons, then you want to make sure you are actually reaping the health benefits and avoiding nasty additives! I often make this in less than 5 minutes to add to whatever meal I’m preparing. After a while you won’t need to measure out the ingredients as such, adding more or less of whatever you like.
Real parmesan cheese is very salty, so it is important to use a high quality salt. I like to use a fine grain Himalayan Pink Rock Salt. I find this type of salt “extra salty”, making it perfect for this recipe. The nutritional yeast is a must for this recipe, creating that cheesy flavour

Lets face it, you probably aren't having this parmesan for its nurtritional benefits. More than likely its to sprinkle on top to add flavour. The fact that it uses nutritional yeast is just a bonus! Nutritional yeast is full of vitamins and minerals, containing all 9 essential amino acids, and rich in B vitamins. Just 1 tablespoon of fortified nutritional yeast contains up to 180% of your RDI of B vitamins! So go ahead and sprinkle away!

Vegan Parmesan Cheese
Ingredients
- ½ cup raw unsalted cashews
- 2 tablespoon nutritional yeast
- ¼ teaspoon garlic powder
- 1 teaspoon salt (high quality, not table salt)
Instructions
- Add all ingredients to a blender or a food processor, and pulse until blended into a parmesan cheese consistency
