
Vegan Protein Pancakes are my latest favourite weekend brunch meal. Pancakes have always been on the top of my list, but I would rarely have them because of the sugar headaches and sugar crash I would get after eating them.
This recipe still feels like a treat, but uses healthier ingredients. Made with only oats, almond milk, a banana, baking powder & protein powder. I'm left feeling satiated and full of energy afterwards. No sugar crashes!

Vegan Protein Pancakes: Tips & Tricks
Add all ingredients to your blender at the same time. Blend for approximately 30 seconds or until smooth. The trick to making your pancakes thicker & fluffier, is to leave the batter for 10 minutes. The batter will continue to thicken as you leave it. This is why the last pancakes you make might be the fluffiest or thickest.


Make sure to cook the pancakes properly before flipping. This can be tricky when the mixture is thicker. When its runny, bubbles will start to form, making it easy to tell when flip it.


Vegan Protein Pancakes Nutrition
These pancakes are an awesome healthy alternative to traditional pancakes. Traditional pancakes contain milk, sugar & eggs, and can leave you feeling sluggish after the sugar high.
Compare that to these pancakes that contain plant milk, oats, protein powder & a banana, and you can see why these are an excellent alternative for those who wish to follow a healthy vegan lifestyle.

Vegan Protein Pancakes
Ingredients
- 1 cup oats
- ⅔ cup vanilla protein powder (60grams) or any other flavour of choice
- 2 teaspoon baking powder
- 300 ml almond milk or any plant based milk of choice
- 1 small banana
Topping
- 2 tablespoon maple syrup
- ½ cup sliced fresh strawberries
Instructions
- Add all ingredients (oats, protein powder, baking powder, almond milk & banana) to a blender. Blender for approximately 30 seconds, or until well combined
- Let the mixture sit for 10 minutes to allow the batter to thicken
- Heat a pan and melt a tablespoon of vegan butter or spray with cooking spray
- Pour the mixture to the desired pancake size
- Cook on one side until bubbles start to form, and then flip
- Cook on the second side for another 2 to 3 minutes
- Remove from the pan, add each cooked pancake to the plate as you go
- Add whatever toppings you like and serve!
