Prepare the papaya: Start by cutting the papaya in half. Use a spoon to scoop out the seeds (if there are any), and then scoop out all the flesh. Discard the skin.
Blend the papaya: Place the papaya flesh into a blender and blend until smooth, creating a smooth papaya puree. Add the freshly squeezed lime juice and salt at this stage too if you are using.
Refrigerate the puree: Pour the papaya puree into a glass jar and cover it with a lid or plastic wrap. Refrigerate it overnight. The puree will firm up, turning into a jelly-like consistency.
Prepare the coconut cream: Chill the coconut cream in the fridge overnight as well. Once ready, shake the coconut cream well. Pour the chilled coconut cream into the canister, pressurize it, and shake several times before using.
Serve and enjoy: When ready to serve, top the papaya pudding generously with whipped coconut cream from the canister.
