Ingredients
6gramsceremonial grade matcha
50mlmilk
½dragonfruit
½cupwater
1tablespoonmonk fruit sweetener
1cupmilk
1handfulice
Instructions
Prepare the Dragonfruit Juice and Puree
Peel and scoop the dragonfruit flesh and add to a small pot with water and monk fruit sweetener.
Bring to a boil, then lower the heat and simmer for about 10 minutes until it becomes a thick puree.
Strain the mixture through a sieve to create a smooth, bright pink dragonfruit juice.
Mix the strained juice with milk to create a sweet dragonfruit milk.
Set the dragonfruit puree aside and use at the bottom of the dragonfruit matcha latte if you want (it is also delicious without if you prefer a matcha latte without fruit chunks)
Whisk The Matcha
Add matcha powder and 50ml of milk to a small bowl.
Use a matcha whisk or electric frother to blend until smooth and frothy.
Assemble the Latte
Add dragonfruit puree (if using) to a tall glass with ice.
