Pomelo Yogurt Bites

- 1 pomelo peeled and segmented
- 2 cups Greek yogurt
- 1 cup white chocolate chips
Line a tray or large plate with baking paper.
Peel the pomelo, remove the membrane and separate the flesh into small pieces.
Place the pomelo, Greek yogurt and white chocolate chips into a large mixing bowl.
Stir until evenly combined.
Spoon the mixture into bite-sized portions on the prepared tray.
Freeze for 3–4 hours, or until completely firm.
Transfer to an airtight container and store in the freezer.
Remove from the freezer and let them slightly defrost for 10 minutes and then enjoy!
