Ingredients

  • 12 Medjool dates
  • 1 cup almond meal
  • ½ cup almond nibs
  • 1 teaspoon pink salt
  • 1 teaspoon vanilla extract
  • 1-4 tablespoon water as needed

  • ½ cup almond nibs

Instructions

  • Prep your dates. Remove the pits and hard ends from all 12 medjool dates.
  • Blend the ingredients. In a food processor, combine almond meal, ½ cup almond nibs, dates, pink salt, and vanilla extract. Pulse until the mixture forms a sticky dough.
  • Adjust consistency. If the mixture feels too dry or crumbly, add water 1 tablespoon at a time (up to 4 tablespoon), and blend again until the dough holds together when pinched.
  • Form into balls. Scoop and roll into 12 even-sized balls.
  • Roll in almond nibs. Coat each ball in the remaining almond nibs for a delicious nutty crunch.
