Ingredients

  • 1 can soda (I use 100 plus) 325ml
  • 2⅓ cup self rising flour
  • cup coconut sugar or any brown sugar
  • cup coconut oil
  • ½ teaspoon salt

Instructions

  • Preheat your oven to 180°C (356°F).
  • Mix all dry ingredients in a large mixing bowl — sift the coconut sugar to remove any lumps, and add in the flour and salt.
  • Add the wet ingredients: pour in the coconut oil and soda.
  • Whisk everything together until smooth.
  • Pour the batter into a greased 7-inch cake pan.
  • Bake uncovered for 30 minutes, then cover with foil and bake another 20 minutes to prevent the top from burning.
  • Cool for at least 15 minutes before cutting. It’s easiest to slice once slightly cooled but is most delicious served warm!
