Soda Cake

- 1 can soda (I use 100 plus) 325ml
- 2⅓ cup self rising flour
- ⅔ cup coconut sugar or any brown sugar
- ⅔ cup coconut oil
- ½ teaspoon salt
Preheat your oven to 180°C (356°F).
Mix all dry ingredients in a large mixing bowl — sift the coconut sugar to remove any lumps, and add in the flour and salt.
Add the wet ingredients: pour in the coconut oil and soda.
Whisk everything together until smooth.
Pour the batter into a greased 7-inch cake pan.
Bake uncovered for 30 minutes, then cover with foil and bake another 20 minutes to prevent the top from burning.
Cool for at least 15 minutes before cutting. It’s easiest to slice once slightly cooled but is most delicious served warm!
