Ingredients
2-3medium sizepurple sweet potatoes
1cupdark chocolate chips 180 grams
½cupplant milk
Icing
⅓cupdark chocolate chips 60 grams
3tablespoonplant milk
Instructions
Wash and peel the purple sweet potatoes.
Chop into smaller cubes sized pieces and boil for 15 minutes.
The potatoes need to be extremely soft, almost falling apart when picked up. Drain the potatoes and add to a large blender or food processor.
Melt 1 cup of dark chocolate chips slowly in the microwave.
Add melted dark chocolate and 1 cup of almond milk to the blender / food processor. Blend smooth. It is important to ensure the mixture is well blended to avoid stringy pieces of potato in the cake.
Pour the mixture into a baking paper lined cake tray or a spring cake pan. The cake is a fudge like texture. If you want to take the whole cake out of the pan keep in mind that you will need to use baking paper. I have used a spring cake pan and can easily take 1 piece at a time, leaving the cake on the base of the pan.
For the icing, melt dark chocolate and mix in the almond milk. Pour on top of the cake. Refrigerate the cake overnight or until cold / firm.
