Ingredients
1cupalmond meal
12Medjool datespitted
⅓cupdesiccated coconut
½teaspoonfine pink saltor any other high quality salt
1teaspoonvanilla extract
1 to 2tablespoonof waterif the mix is a little bit dry
For Dusting
¼cupdesiccated coconut
Instructions
Add almond meal, Medjool dates (ensure pitted), desiccated coconut, salt and vanilla extract to the food processor
Pulse until all ingredients are blended. Continue pulsing until the mixture starts clumping together like cookie dough. Slowly add water, 1 tablespoon at a time if the mixture is dry.
Use a spoon to measure each ball size evenly. Roll into a ball shape with your hands (lightly wet your hands to stop the mixture sticking).
Pour dessicated coconut into a bowl. Dust each ball in the desciated coconut until covered.
Notes
Store in an airtight container in the fridge. These will last a long time in your fridge (I keep them for 2 to 3 weeks)
