Dragon Fruit Popsicles

With just three simple ingredients, you can create these delightful Dragon Fruit Popsicles that are both healthy and delicious. Not only are they a refreshing treat on a hot summer day, but they also offer numerous health benefits thanks to the nutritious dragon fruit.

Ingredients

  • ½ red dragon fruit
  • ½ white dragon fruit
  • 3 juice of 3 limes
  • ¼ apple or orange juice can be store bought or freshly squeezed

Instructions

  • Start by cutting the red dragon fruit in half and scooping out the flesh with a spoon. Place the flesh into a blender or food processor.
  • Add the apple juice and freshly squeezed lime juice to the blender.
  • Blend the ingredients until smooth and well combined.
  • Scoop the white dragon fruit flesh and slice into cube sized pieces.
  • Add the white dragon fruit cubes to the popsicle molds.
  • Insert popsicle sticks into each mold and pour the mixture into the molds, leaving a little bit of space at the top for expansion during freezing (not necessary if using silicone molds). You may use a strainer when pouring the liquid if you aren't using a high speed blender).
  • Place the molds in the freezer and allow them to freeze for at least 4-6 hours, or until completely solid.
  • Once the popsicles are fully frozen, remove them from the molds by gently pulling on the popsicle sticks to release the popsicles.
