Ingredients

  • 1 dragon fruit
  • 1 cup strawberries
  • 1-2 tablespoon honey maple syrup / agave for vegan option

Instructions

  • Blend the ingredients: Peel the dragon fruit and add the flesh to a blender with the frozen strawberries and honey. Blend until completely smooth.
  • Freeze into cubes: Pour the mixture into a silicone ice cube tray. Freeze overnight until completely solid.
  • Process until creamy: Transfer the frozen cubes to a food processor. Blend, stopping every minute or so to scrape down the sides with a spatula. Continue processing until the mixture becomes smooth, creamy, and scoopable.
  • Serve: Enjoy immediately for the softest texture or freeze for another 20-30 minutes if you'd like firmer scoops.
