Ingredients You'll Need
- 1 dragon fruit
- 1 cup strawberries
- 1-2 tablespoons honey
Dragon Fruit
I recommend using purple (red-fleshed) dragon fruit for the most vibrant colour. White dragon fruit will also work but won't look as pretty! The sweeter your dragon fruit, the sweeter your finished sorbet will be.
Strawberries
The strawberries naturally boost both the sweetness and flavour while helping create a smoother texture. If your dragon fruit is already beautifully sweet, you can reduce the strawberries or even leave them out altogether.
Honey
I usually add 1-2 tablespoons depending on how sweet the fruit is. Taste your blended mixture before freezing and adjust if needed. For a vegan version, simply swap the honey for maple syrup or agave.
How To Make Dragon Fruit Sorbet
1. Blend the ingredients
Peel the dragon fruit and add the flesh to a blender with the frozen strawberries and honey. Blend until completely smooth.
2. Freeze into cubes
Pour the mixture into a silicone ice cube tray. Freeze overnight until completely solid.
3. Process until creamy
Transfer the frozen cubes to a food processor. Blend, stopping every minute or so to scrape down the sides with a spatula. Continue processing until the mixture becomes smooth, creamy, and scoopable.
4. Serve
Enjoy immediately for the softest texture or freeze for another 20-30 minutes if you'd like firmer scoops.
Tips For The Best Dragon Fruit Sorbet
- Use ripe dragon fruit for the best flavour.
- Silicone ice cube trays make removing the frozen cubes much easier.
- Don't skip scraping down the food processor—it helps everything blend evenly.
- If the mixture looks crumbly at first, keep processing. It will eventually become creamy.
- Don't add any liquid or you risk turning it into a smoothie!
Variations
Strawberry Dragon Fruit Sorbet
Increase the strawberries to 2 cups for a sweeter berry flavour.
Mango Dragon Fruit Sorbet
Replace the strawberries with frozen mango.
Lime Dragon Fruit Sorbet
Add the juice of half a lime for a refreshing citrus flavour.
Coconut Dragon Fruit Sorbet
Blend in a splash of coconut milk before freezing.
