Dragon Fruit Yogurt Bark

Ingredients

  • 1 dragon fruit any variety / color works
  • 1 cup yogurt thick yogurt works best
  • ½ cup dark chocolate chips

Instructions

  • Cut the dragon fruit in half and remove the skin. Slice into thin pieces and then slice the circles in half again.
  • On a large piece of baking paper, arrange the dragon fruit pieces with little to no gap between them.
  • Pour the yogurt over the top, covering the dragon fruit.
  • Melt the dark chocolate and drizzle it over the yogurt.
  • Freeze for at least 2 hours. Once frozen, break into bark pieces and store them in the freezer.
