Dragon Fruit Yogurt Bark

- 1 dragon fruit any variety / color works
- 1 cup yogurt thick yogurt works best
- ½ cup dark chocolate chips
Cut the dragon fruit in half and remove the skin. Slice into thin pieces and then slice the circles in half again.
On a large piece of baking paper, arrange the dragon fruit pieces with little to no gap between them.
Pour the yogurt over the top, covering the dragon fruit.
Melt the dark chocolate and drizzle it over the yogurt.
Freeze for at least 2 hours. Once frozen, break into bark pieces and store them in the freezer.
