Ingredients

Sticky Rice

  • 1 cup glutinous rice
  • 1 cup coconut milk
  • 1 pinch salt

Durian Sauce

  • 2 durian seeds
  • 1 cup coconut milk
  • 3 tablespoon coconut sugar
  • 1 tablespoon cornstarch
  • 2 tablespoon water

For Serving

  • 2 durian seeds

Instructions

Prepare the Sticky Rice

  • Wash the glutinous rice thoroughly. Place the rice in a sieve in a bowl of water and stir vigorously. Drain the cloudy water and repeat 2–3 times until the water runs clear.
  • Soak the rice for at least 3 hours after wrapping it in cheesecloth.
  • Steam the rice for 25 minutes or until fully cooked.
  • Once the rice is steamed, transfer it to a pot over low heat. Add 1 cup of coconut milk and a pinch of salt.
  • Break up the rice and stir gently until it absorbs the coconut milk and turns sticky, about 4 minutes.

Make the Durian Sauce

  • In a pot, add the flesh of 2 durian seeds, 1 cup of coconut milk, and 3 tablespoon of coconut sugar. Heat the mixture over medium heat, breaking up the durian while stirring until the sugar dissolves.
  • In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoon of water. Gradually add this mixture to the durian sauce, stirring constantly until the sauce thickens. If you want a thicker sauce, you can repeat with an additional cornstarch slurry. Remove from heat.

Assemble and Serve

  • Plate the sticky rice and pour the sweet durian sauce over the top. Add a couple of extra durian seeds on top for a decadent touch. Enjoy warm!
