Sticky Rice
1cupglutinous rice
1cupcoconut milk
1pinchsalt
Durian Sauce
2durian seeds
1cupcoconut milk
3tablespooncoconut sugar
1tablespooncornstarch
2tablespoonwater

Instructions
Prepare the Sticky Rice
Wash the glutinous rice thoroughly. Place the rice in a sieve in a bowl of water and stir vigorously. Drain the cloudy water and repeat 2–3 times until the water runs clear.
Soak the rice for at least 3 hours after wrapping it in cheesecloth.
Steam the rice for 25 minutes or until fully cooked.
Once the rice is steamed, transfer it to a pot over low heat. Add 1 cup of coconut milk and a pinch of salt.
Break up the rice and stir gently until it absorbs the coconut milk and turns sticky, about 4 minutes.
Make the Durian Sauce
In a pot, add the flesh of 2 durian seeds, 1 cup of coconut milk, and 3 tablespoon of coconut sugar. Heat the mixture over medium heat, breaking up the durian while stirring until the sugar dissolves.
In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoon of water. Gradually add this mixture to the durian sauce, stirring constantly until the sauce thickens. If you want a thicker sauce, you can repeat with an additional cornstarch slurry. Remove from heat.
Assemble and Serve
Plate the sticky rice and pour the sweet durian sauce over the top. Add a couple of extra durian seeds on top for a decadent touch. Enjoy warm!
