Making durian sticky rice is easy to do at home! Durian sticky rices consists of a few steps including the sticky rice, the sweet durian sauce, and then assembling it all together. The glutinous rice is soaked, steamed, and then mixed with coconut milk to create that signature sticky texture. The durian sauce is made by simmering durian flesh with coconut sugar and coconut milk and also thickened with cornstarch.

Here’s what you’ll need to make this tropical treat:
- Durian: The star of the dish, contributing its unique flavor and creamy texture.
- Glutinous rice: Also known as sticky rice, this provides the chewy base for the dessert.
- Coconut milk: Adds creaminess and enhances the overall tropical flavour.
- Coconut sugar: Sweetens the dish with a rich, caramel-like flavour. Traditionally white sugar is used but I prefer to use an unrefined option like coconut sugar. Plus, it adds a delicious caramel like flavour that I love!
- Cornstarch: Used to thicken the durian sauce.
Tips and Tricks for Perfecting Your Durian Sticky Rice
- Soak the rice properly: Glutinous rice needs to be soaked for at least three hours before steaming. This step ensures the rice cooks evenly and absorbs the coconut milk fully.
- Steam, don’t boil: Steaming the rice instead of boiling helps achieve the desired sticky texture without becoming mushy.
- Choose fresh durian: make sure to use ripe durians!
- Sweetness: If you prefer a more or less sweetness, adjust the amount of coconut sugar accordingly.

Durian sticky rice is best served warm, with an extra dollop of fresh durian on top. I also recommend serving with some coconut pandan ice-cream or coconut durian ice-cream.
How to Make Durian Sticky Rice
Ingredients For The Sticky Rice:
- 1 cup glutinous rice
- 1 cup coconut milk
- 1 pinch salt
For the Durian Sauce:
- 2 durian seeds (flesh only)
- 1 cup coconut milk
- 3 tablespoon coconut sugar
- 1 tablespoon cornstarch + 2 tablespoon water
For Serving:
- 2 or more durian seeds (optional)
Instructions
Prepare the Sticky Rice
- Wash the glutinous rice thoroughly. Place the rice in a sieve in a bowl of water and stir vigorously. Drain the cloudy water and repeat 2–3 times until the water runs clear.
- Soak the rice for at least 3 hours after wrapping it in cheesecloth.
- Steam the rice for 25 minutes or until fully cooked.
- Once the rice is steamed, transfer it to a pot over low heat. Add 1 cup of coconut milk and a pinch of salt.
- Break up the rice and stir gently until it absorbs the coconut milk and turns sticky, about 4 minutes.
Make the Durian Sauce
- In a pot, add the flesh of 2 durian seeds, 1 cup of coconut milk, and 3 tablespoon of coconut sugar. Heat the mixture over medium heat, breaking up the durian while stirring until the sugar dissolves.
- In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoon of water. Gradually add this mixture to the durian sauce, stirring constantly until the sauce thickens. If you want a thicker sauce, you can repeat with an additional cornstarch slurry. Remove from heat.
Assemble and Serve
- Plate the sticky rice and pour the sweet durian sauce over the top. Add a couple of extra durian seeds on top for a decadent touch. Enjoy warm!
