Ingredients
¾cupshelled edamame I use frozen edamame and defrost it by soaking in warm water for 15 minutes
90gramsuncooked soba noodle or pastarefer recipe notes for alternatives
Oil Dressing / Sauce
1tablespoonfreshly grated ginger
3tablespoonsoy sauceand some more to taste
¼tablespoonsesame oil
1tablespoonmaple syrup refer blog notes for alternatives
Garnishes
1spring onion, diced
1tablespoonblack sesame seeds
Additional soy sauce as required for taste
2-3teaspoonChilli flakes optional to add more if you like it spicy!
Instructions
Unthaw the frozen edamame
Cook pasta or soba noodles as per packet instructions
In a bowl, add soy sauce, sesame oil, maple syrup, grated ginger, and mix
Add edamame, cooked noodle / pasta, and sauce / oil to a bowl and mix. The edamame will fall to the bottom of the mixing bowl. Be careful to distribute the edamame evenly when serving
Serve into bowls.
Top with spring onion and black sesame seeds (and chilli if you are using)
