Start by preparing the papaya. Peel and dice the papaya into small pieces, ensuring that any seeds are removed.
Place the diced papaya into a blender or food processor, along with the sugar. Blend the ingredients until you achieve a smooth and well-combined mixture.
Preheat your oven to 95 degrees Celsius / 200 fahrenheit.
Line a baking tray with parchment paper, ensuring full coverage.
Pour the blended mixture onto the prepared tray.
Use a spatula or the back of a spoon to spread the mixture evenly.
Bake in the preheated oven for 5 to 6 hours.
The roll-up is ready when it is not super sticky to touch (it will still be slightly sticky).
Allow it to cool for 30 minutes before cutting and rolling. Carefully peel the whole piece of the rollup from the baking paper lined tray and place it on a new piece of parchment paper. This will make it easier to roll and easier to peel and eat later!
Cut the papaya into thin strips and roll up!
