Mint Salad Dressing

- ½ cup raw cashews
- ½ cup fresh parsley leaves
- ½ cup fresh mint leaves
- 1 lemon, juice of
- ½ to ¾ cup of water or milk of choice slowly add water / milk until desired consistency is achieved
- 1 teaspoon sea salt or any other high quality salt
- 1 pinch of cracked pepper
- ½ to 1 fresh garlic clove optional
Soak the raw cashews in boiling water for 10 minutes and then drain.
Add all of the ingredients into a blender.
Blend until smooth, adjusting water to reach your desired consistency.
