Ingredients

  • 1 large papaya
  • 3 limes

High Protein Vegan Cream

  • 300 grams silken tofu
  • 100 grams white chocolate vegan
  • 1 tablespoon coconut oil if required for melting chocolate
  • 1 teaspoon vanilla extract

Instructions

High Protein Vegan Cream

  • Make the high protein cream the day before by melting the white chocolate in a heatproof bowl over a pot of simmering water or by 20 second bursts in the microwave. If necessary, add 1 tablespoon of coconut oil to achieve a smooth consistency. 
  • In a blender, combine the silken tofu, vanilla extract, and melted white chocolate. Blend until smooth and creamy.
  • Refrigerate for at least 4 hours or overnight for best results. This will allow the cream to set.

Papaya Boats

  • Once the cream is ready, prepare the papaya by slicing it in half lengthwise. Use a spoon to scoop out the seeds and discard them.
  • Wash the limes thoroughly and dry them. Grate the lime zest and set it aside for garnishing.
  • Juice the limes and pour the lime juice over the papaya halves.
  • Take the chilled cream out of the refrigerator and scoop it into the hollowed-out center of each papaya half. Spread it evenly, filling the crevices.
  • Sprinkle the lime zest on top of the cream, adding a burst of citrusy aroma and vibrant color.
