Pre heat oven to 180 degrees / 350F
Add sugar, butter, and coconut oil to a a large bowl and whip with an electric mixer. Add the bananas and tofu, stirring into the wet mixture until combined.
In a separate bowl, add all dry ingredients and combine with a whisk.
Add the dry ingredients to the wet, folding until combined. If the mixture is very dry, you need more bananas. You can add a dash of plant milk if you don't have more bananas. Although the mixture should be quite thick. Fold in the chocolate chips or nuts (if using).
Line a loaf pan with baking paper and grease with oil or vegan butter. Add the wet mixture to the loaf and spread evenly. Bake for 45 minutes.
Remove from oven, and let cool on a baking tray until slicing.
