Vegan Protein Pancakes

Equipment

  • Blender

Ingredients

  • 1 cup oats
  • cup vanilla protein powder (60grams) or any other flavour of choice
  • 2 teaspoon baking powder
  • 300 ml almond milk or any plant based milk of choice
  • 1 small banana

Topping

  • 2 tablespoon maple syrup
  • ½ cup sliced fresh strawberries

Instructions

  • Add all ingredients (oats, protein powder, baking powder, almond milk & banana) to a blender. Blender for approximately 30 seconds, or until well combined
  • Let the mixture sit for 10 minutes to allow the batter to thicken
  • Heat a pan and melt a tablespoon of vegan butter or spray with cooking spray
  • Pour the mixture to the desired pancake size
  • Cook on one side until bubbles start to form, and then flip
  • Cook on the second side for another 2 to 3 minutes
  • Remove from the pan, add each cooked pancake to the plate as you go
  • Add whatever toppings you like and serve!
