Ingredients
¼wholewatermelon
1teaspoonCeltic sea salt
2tablespoonmaple syrupor agave syrup, increase / decrease amount as per preferred sweetness
Instructions
Start by removing the skin of the watermelon and cutting it into small chunks.
Add the fresh watermelon flesh, Celtic sea salt, and maple syrup (or agave) into a blender. Blend the mixture until it becomes smooth and well-combined. If you aren't using a seedless watermelon, you can strain the mixture through a sieve before proceeding to the next step. I prefer to use a seedless watermelon to keep the watermelon pulp in the recipe.
Pour the blended watermelon mixture into the ice pop molds, leaving a small gap at the top to allow for expansion during freezing.
Insert the sticks before freezing. Freeze for at least 4 hours or until completely solid
Once frozen, remove the ice pops from the molds by running them under warm water for a few seconds.
Serve the watermelon ice pops immediately and enjoy the refreshing taste of summer!
