This sambal petai rice dish uses classic South East Asian ingredients: sambal, petai, and rice! It's super easy to make and an extremely tasty fried rice recipe.

What is Sambal?
Sambal is a spicy sauce made with red chilli's that is used in a variety if South East Asian dishes. Each country has their own version of a sambal and even each individual has their own sambal recipes! It can get quite heated between countries and individuals when agreeing on the "correct" recipe but the truth is that there are many variations and it's up to your own individual taste.
Ingredients
To make this sambal petai dish you will need:
- 1 cup sambal
- 2 cup cooked rice (rice from the night before is best)
- 1 handful petai beans
- 2 tablespoon oil for cooking
Method
To make this fried rice recipe:
- Peel the petai and slice in half to ensure there are no worms inside.
- Add oil to a large wok or pan and bring to a medium heat.
- Add the petai beans and sauté for 1 minute.
- Add the sambal and continue to sauté for another minute.
- Add the fried rice and continue to mix until all of the ingredients are well combined.
- Compress the rice slightly into a small bowl and flip onto a plate.
- Serve and enjoy!
