- 1 can (325 ml) 100 Plus, or your soda of choice (like Coke, Fanta, soda water)
- 2 ⅓ cups self-rising flour
- ⅔ cup coconut sugar
- ⅔ cup coconut oil (unrefined for best coconut flavour)
- ½ teaspoon salt
📝 Tip: If you’re using a soda that’s already very sweet (like Fanta or Coke), you can slightly reduce the coconut sugar if you prefer less sweetness.

Step-by-step instructions:
- Preheat your oven to 180°C (356°F).
- Mix all dry ingredients in a large mixing bowl — sift the coconut sugar to remove any lumps, and add in the flour and salt.
- Add the wet ingredients: pour in the coconut oil and soda.
- Whisk everything together until smooth.
- Pour the batter into a greased 7-inch cake pan.
- Bake uncovered for 30 minutes, then cover with foil and bake another 20 minutes to prevent the top from burning.
- Cool for at least 15 minutes before cutting. It’s easiest to slice once slightly cooled but is most delicious served warm!
