A spicy rambutan popsicles recipe that is made with fresh rambutans, fresh lime juice and fresh red chilli's.

It tastes and looks similar to lychees and can be used to make many delicious rambutan recipes such as rambutan jam or rambutan ice-cream. Rambutan is naturally a very sweet and juicy fruit that pairs perfectly with lime juice and chilli. I took inspiration for this recipe from a popular South East Asian recipe called Rambutan Asinan. The flavour combination is perfect and its the perfect and hydrating treat on a summers day!

Ingredients
To make these spicy rambutan popsicles you will need:
- 20 rambutans
- 2 large red chilli's
- Juice of 2 limes
- ยผ cup maple syrup
Method
To make these spicy rambutan popsicles:
- Peel the rambutans either using your hands or a knife. Cut away the rambutan flesh with a knife and discard the seeds.
- Cut the stalk off the chilli's, cut in half, and remove the seeds.
- Extract the juice from the 2 limes, ensuring to remove all seeds.
- Add all of the ingredients to a blender and blender smooth.
- Pour the mixture into ice pop moulds or use a strainer first to remove the pulp. I like to make these popsicles with the pulp because it is healthier this way. This is entirely up to personal preference.
- Freeze for at least 2 hours. Remove from the moulds when ready to be enjoyed.


Expert Tips
Here are some of my expert tips for these rambutan ice blocks:
- If you don't like the pulp texture, use a strainer to remove the pulp before pouring into the ice block moulds.
- Taste test the mixture before freezing. This way you can make sure it is not too spicy or not spicy enough to your liking.
- To make it more spicy, try adding more chilli's, or keep the seeds in the chilli's.
- To make it less spicy, you can add a dash of coconut cream or coconut milk.
