To make this cucumber salad you will need:
- 1 cucumber, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon vinegar (rice vinegar works best, but any kind will do)
- 1 teaspoon sesame oil
- 1 tablespoon garlic chili crisp
- 1 teaspoon sesame seeds
Instructions
To make this spicy asian cucumber salad:
- Start by thinly slicing 1 cucumber.
- In a jar or container, add the cucumber, 2 tablespoon soy sauce, 1 tablespoon vinegar, 1 teaspoon sesame oil and 1 tablespoon garlic chili crisp.
- Cover with a lid and shake until the cucumber slices are evenly coated with the dressing.
- Let the cucumber sit in the fridge for 1 to 2 days or serve immediately. Pour into a bowl and sprinkle with 1 teaspoon sesame seeds.

Soy sauce may be substituted for tamari sauce or liquid aminos for a gluten free option. Liquid aminos is also a good option for those who suffer from acid reflux (according to the Acid Watchers book).

In Malaysia I can buy the most delicious garlic chilli crisp. It is crispy garlic in coconut oil with red chilli flakes. However, this may not be readily available everywhere. If this is true for you, then you may substitute the garlic chilli crisp for either:
- 1 teaspoon red chilli flakes and 1 crushed garlic clove.
- or, 1-2 teaspoon of chilli paste and 1 crushed garlic clove
